Morning! Last week I challenged myself to post a recipe again soon, and as I thought of what to make, I got hungrier and hungrier. Finally, I caved and made muffins. The girls where at MIL’s for the day, and the baby would nap a large portion of the day, so i set out to clean, bake and do laundry. All those things I had been neglecting in the last week as I was creating my book from my online course I mentioned last Thursday.
So, Here’s my recipe for the week (or for the day…I’ve no real schedule for them LOL)
Morning Muffin Magic (taken from our church cookbook called Welcome to our Kitchen – submitted by Kathy Rempel)
3 eggs 1/2 tsp salt
3/4 cup oil 2 cups grated carrots
1 1/2 tsp vanilla 1/2 cup raisins
2 cups flour 1/2 cup chopped nuts
1 1/4 cup sugar 1/2 cup coconut
2 tsp baking soda 1 apple, cored and grated
2 tsp cinnamon
In a small bowl, beat together eggs, oil and vanilla. Set aside. Mix together remaining ingredients. Add wet ingredients to the dry. Stir until moistened. Bake at 350 F for 20 to 25 minutes. Yield: Approx. 2 dozen muffins.
I omitted the Cinnamon, coconut, and raisins and i added a bit more apple. they turned out perfect! (oh, and i made like 4x the recipe. LOL, I’ve been know to be a little overboard when cooking) if a little is good, a lot is better, right?
I always felt that blogs without pictures are boring…so here’s my pictures of my beautiful muffins in the making! What’s your favorite muffin recipe? I love texture in mine. The more the better (minus the raisins that is! LOL) I’m not partial to any certain muffin pans, but I’m going to have to replace the large pampered chef mini muffin tin shortly…as the finish is coming off. hate it when that happens. the kids LOVE the mini ones, and area always sad when they’re gone before the bigger ones and they have to share mommies muffins with her.
